Peanut Butter Chicken

I like being able to put things into the crockpot in the morning and come home in the afternoon to the smell of supper, already cooked. Give this one a try and let me know what you think:

Peanut Butter Chicken

3 T. bouillon paste or powder
2 big leeks, thinly sliced
4 garlic cloves, thinly sliced
1 red bell pepper, sliced and de-seeded
1 green bell pepper, also sliced and de-seeded
1 yellow bell pepper, also sliced and de-seeded
8-12 chicken thighs (depending on how big your crockpot is)
Peanut butter (crunchy or smooth, whatever you prefer), probably about a cup
Crushed red pepper flakes

Fill the crockpot with water to about 1 inch deep. Add in bouillon, leeks, garlic and peppers. Coat both sides of chicken thighs with peanut butter, and sprinkle with pepper flakes. Place on top of the other ingredients in the slow cooker, cover, and cook on Low for five to six hours.
